This Air Fryer Banana bread recipe is one of my favorite recipes. It is really easy requiring only a few everyday ingredients and 10 minutes of effort. So you can whip some up classic fresh banana bread for the family, breakfast, brunch, or snack.

Delicious Air Fryer Quick Banana Bread Recipe

It smells heavenly when it is baking, fragrant from nutmeg and cinnamon, moist from the addition of the greek yogurt, a little dense with a bit of crunch from being topped with walnuts. Soooooo many flavors and textures in every bite.

This yogurt banana bread Air Fryer recipe is a good way to use up those over ripe bananas sitting on your kitchen counter. And like my one bowl Air Fryer Chocolate Cake, and Air Fryer Chocolate Chip Cookies, it is going to be your next baking obsession every single weekend. The only problem is whether you’ll be able to wait for this quick bread to cool before you dig in!

Ingredient Notes

  • Flour – you need plain all purpose flour for this recipe. make sure to level the flour in the cup before adding to mixing bowl,
  • Bananas – for this you need to use soft over ripe bananas. These are darkish yellow with a lot of black spots. So if they are not ripe enough it is best to wait a few days. Mash them with a fork, or puree them in a blender. See below on how to help ripen you bananas.
  • Eggs – If you don’t have large eggs you can use 3 medium ones.
  • Sugar – this recipe uses plain granulated sugar but you can easily use caster sugar or brown sugar for depth of flavor instead.
  • Dairy – You will need whole mil and non fat yogurt. However any milk will work. If you use very thick yogurt you may need to dilute it with a little milk or water.
  • Oil – use simple vegetable oil like canola oil or cooled melted butter.
  • Baking soda – this will help your banana bread rise. For best results sieve the baking soda into the flour to avoid any lumps which don’t taste great in baked goods. Note that this is different from baking powder.
  • Spices – ground cinnamon, ground nutmeg and vanilla extract give this its well loved flavor. Add more or less to your taste.
  • Nuts – chopped walnuts add nuttiness and crunch. But omit if you are not a fan of nuts.

How To Make Air Fryer Banana Bread

  1. Line and spray or lightly oil a 6-inch round cake pan.
  2. In a mixing bowl mix together the flour, baking soda, nutmeg, cinnamon, and salt.
  3. Mash the banana ( I do it quickly in a blender) and mix in the eggs, sugar, milk, yogurt, oil, and vanilla extract till combined.
  4. Add the wet ingredients to the dry ingredients until just combined.
  5. Pour the batter into the cake tin and sprinkle walnuts on top.
  6. Preheat air fryer to 310F / 150C, place the cake pan in the Air Fryer basket, and bake for about 35 minutes or until a skewer inserted into the middle of the cake comes out clean.
  7. Remove from the Air Fryer basket, let the banana cake cool on a wire rack (still in the pan) for about 20 minutes before removing, slicing, and serving.

How To Make Banana Bread In The Oven

  • Preheat the oven to fan-assisted 140C / 160C / 320F / gas 3 and prepare a 2-pound loaf pan.
  • Add all the ingredients into a bowl and mix until combined.
  • Pour the banana bread batter into the prepared baking pan and smooth the top.
  • Transfer to the preheated oven and bake for 1 hour or until a skewer inserted into the banana bread comes out clean.
  • Let the banana cake cool on a wire rack (still in the pan) for about 20 minutes before transferring to a rack to cool a bit more before serving.

Recipe Tips

  • Ideally, you should make sure your ingredients are at room temperature before using to make this Air Fryer Banana Nut Bread. 
  • Line the bottom of your cake pan with parchment paper and lightly oil it to avoid the quick bread sticking.
  • Feel free to use overripe plantains instead.
  • You need to cook this on low in the air fryer, otherwise the top of the bread will cook quickly so you end up with uncooked batter at the bottom.
  • The top of the cake will get a little browner than it does in the oven. If you prefer to avoid this, then loosely cover the banana bread with foil for the second half of baking.
  • Air fryer temperatures can vary depending on the make and model. I recommend starting out with less cook time, checking for doneness, and then adding more time as needed.

Delicious Variations

  • Vary the spices. feel free to add in ground cardamom, almond extract, orange zest, etc. instead.
  • Vary the oil – feel free to use canola oil, sunflower oil, olive oil or coconut oil.
  • Vary the sweetener. You can use brown sugar instead. Also you can use a little bit less sugar.
  • Vary the flour – swap some of the all purpose flour for wholewheat flour.
  • Vary the nuts – use almonds, pecans, or hazelnuts instead.
  • Add chocolate – feel free to mix in chocolate chips or chocolate chunks into the batter. YUM!

Storage

I highly recommend making a few loaves at the same time and then storing them in the freezer

  • Store – Homemade banana bread will keep for 3-4 days when wrapped in plastic wrap. 
  • Freeze – Wrap banana bread in plastic wrap, followed by foil. You can also place these in a large ziploc bag. Label the bags and then lay them flat in the freezer. Store in the freezer for up to 3 months. Freeze in the portion sizes you will eat, so you only defrost what you need.

FAQs

How Do You Mash Bananas?

The easiest way to mash bananas is to peel them and cut into chunks and add them into a blender and whiz them into a purée. Alternatively, add the banana chunks into a bowl and mash with a fork. You may get some small lumps but that adds texture to the cake.

Can I Make Mini Loaves Instead?

You certainly can. But these will cook quicker. So you’ll need to keep checking them till they are done.

How to Ripen Bananas Quickly?

To quickly ripen bananas in the oven, bake them at 250F for 15 to 30 minutes until really black and soft. Bake time will depend on the initial ripeness of the bananas.

How To Store Ripened Bananas

Freeze them unpeeled in an air tight container. When ready to use, defrost and mash or cut.
