  1. Wash potatoes and slice into thin, even slices using a mandolin.
  2. Place in a bowl and sprinkle with a teaspoon of salt. Fill with water to cover and let sit for 20 minutes. 
  3. Rinse potatoes and dry thoroughly with paper towels. 
  4. Place slices in a single layer inside the air fryer basket and spray with a bit of oil.
  5. Air fry in batches at 350F / 180C for 8-13 minutes. Turn the potatoes a couple of times during cooking so they don’t burn.  Watch closely as they can cook faster than expected. 
  6. Sprinkle with salt, let cool, then serve and enjoy. 

Which Potatoes Are Best For Chips?

  • Russet Potato – This classic choice for chips is what’s commonly used for store bought chips. Look for firm, fresh russet (or baking) potatoes for the best results. 
  • Yukon Golds – Also commonly used for commercial potato chips, yukon golds have a milder flavor and can handle a lot of seasoning. 
  • Sweet Potatoes – Sweet potatoes are perfect for making chips. Cook them just like you would cook baking potatoes but you may need to slightly increase the cooking time. 
  • Other Potatoes – There is no rule that says you can’t use other potatoes (such as reds or fingerlings) to make potato chips. Experiment with different varieties to discover your favorites.

  • Freeze – Freezing chips can really extend their life. Just pop them into a zip top bag and place them where they won’t get smooshed. Frozen cooked potato chips are nice and crunchy but you can rewarm them in the air fryer for a few minutes.

We recommend lining a bowl with paper towels and adding the chips. The bowl will soak up any excess oil. After an hour or so, transfer the chips to zip-top bags and store them for up to 10 days.
